For golden boba pearls
- 90 ml water
- 2 tbsp. brown sugar
- 1 cup tapioca starch
- more starch for dusting.
- 1 tbsp. simple syrup or honey for coat the cooked boba pearls
Oolong milk tea for one serving
- 3 g oolong tea
- 200 ml boiling water
- 1/2 cup fresh whole milk
- ice cubes
- 2 tbsp. simple syrup
To make the boba pearls
Add brown sugar in hot boiling. Turn off the fire, and add half of the starch. Mix for 5-6 seconds. add the remaining starch.
Mix the dough when it is still hot using tools like a scraper. Knead with your hand until it is warm, but not completely cooled. Knead until the dough is almost smooth. Then cut into four pieces, and shape each piece into a long log. Pinch a small portion and roll it into a round ball. Dust with more starch to avoid sticky. Then shift the extra flour off with a strainer.
Cook the boba pearls
Add the boba pearls to a pot with hot boiling water (at least 5 times more water), and then cook for 15 minutes. Turn off the fire, and let it stand for another 15 minutes. Transfer out and soak in cold water. Strain and mix well with simple syrup or honey.
Note: if you make the boba pearls at home, you may have leftovers. You can use them in other bubble teas. Dust the uncooked boba pearls and then freeze them in an air-tight bag. Next time, put them in hot boiling water and cook directly.
You can also using other types of boba pearls like popping boba, jellies or crystal boba in this oolong bubble tea.
