Read the instructions on the package and see which type of boba pearls you bought. Heat a large pot of water to a boil and then add boba pearls. Cook for the required time (maybe 20 minutes or maybe 5 minutes). Then let them sit covered for another required time until they’re soft and chewy.
Strain and rinse under running water or you can choose to soak in iced cold water. This is the key step to avoid them becoming sticky together.
Then take out and strain. In a small pot, add clean water, brown sugar, and cooked boba pearls, continue to cook for another 5 minutes until the brown sugar thickened ( note 1)
Make the chocolate mixture
In a separate measuring cup or jug, add the cocoa powder and chocolate syrup. Add hot water to the measuring cup. Now, this is where you can add the hot black tea of your choice instead of water. Mix these ingredients together. A hand-held frother or mixer is the easiest way, but you can also use a whisk or fork. Just make sure the cocoa powder has completely dissolved in the hot water and no granules remain.
Assemble
Grab the glass or cup of your choice and line the sides with chocolate syrup to create the dirty appearance.
Place two spoonfuls of cooked tapioca pearls into the bottom of the cup. Add a large scoop of ice on top.
Pour in the milk, but don’t fill it up all the way! Add the chocolate mixture lastly.
Now, give the ingredients a good stir with your boba straw to evenly distribute the chocolate mixture. Enjoy your chocolate bubble tea!
