- pineapple 5 to 6 medium-sized chunks
- ice cube
Matcha liquid
- 1 tbsp. matcha powder
- 2 tbsp. warm water
- 1 tbsp. white sugar
Coconut milk
- 1/2 cup coconut milk
- 1 tbsp. syrup
Add warm water (around 55 degrees C) to matcha powder. Hold the whisk with one hand and use your wrist to whisk the matcha and water briskly in a “W” or “M” shaped motion. Set aside.
Add syrup to the coconut milk and stir well.
Use a muddler to mash the pineapple until it turns into jam. If you want the pineapple to release its flavor better you can mash it for a longer time.
Finally add ice cubes to the pineapple jam to fill the serving glass, then pour in the blended coconut milk and matcha liquid.
