One of the reason that I love summer the most is there are so many choices for fruits. We have combined strawberry and many other fruits with matcha drink. In this recipe, we will combine pineapple and matcha together. The lovely yellow and green color.

The natural freshness of matcha, the sweetness and sourness of pineapple, combined with the fragrance of coconut milk. It can be an ideal drink for summer. And it comes in three colors – yellow, white and green – for a very layered and attractive look.

Ingredients

  • pineapple, 5 to 6 medium-sized chunks
  • ice cube

Matcha liquid

  • 1 tbsp. matcha powder
  • 2 tbsp. warm water
  • 1 tbsp.sugar

Coconut milk

  • 1/2 cup coconut milk
  • 2 tbsp. syrup

Instructions

Add the matcha powder to a measuring cup, then pour in 1-2 tbsp. hot water, whisk them until the matcha is perfectly blended, and turn into a slight paste state.

Add sugar and the remaining water. Hold the whisk with one hand and use your wrist to whisk the matcha and water briskly in a “W” or “M” shaped motion. We need to aerate the mixture until a layer of froth forms on the surface.

Use a muddler to mash the pineapple until it turns into jam. If you want the pineapple to release its flavor better you can mash it for a longer time.

Finally add ice cubes to the pineapple jam to fill the serving glass, then pour in sweetened coconut milk and matcha liquid.

Coconut milk

  • Add warm water (around 55 degrees C) to matcha powder. Hold the whisk with one hand and use your wrist to whisk the matcha and water briskly in a “W” or “M” shaped motion. Set aside.
  • Add syrup to the coconut milk and stir well.
  • Use a muddler to mash the pineapple until it turns into jam. If you want the pineapple to release its flavor better you can mash it for a longer time.
  • Finally add ice cubes to the pineapple jam to fill the serving glass, then pour in the blended coconut milk and matcha liquid.
