What’s Butterfly Pea Flower
If you are a returning visitor, you may know I get many butterfly pea flower recipes. I love that dreaming ocean blue color. For your information, it is native to Southeast Asia and is named Clitoria ternatea. It belongs to a herbal tea. The magic about butterfly peas is the color change; they usually have a striking blue color. But if you add lemon juice, the PH value will decrease and it will become purple or pink. It is a magic herbal tea that you can try at home.
It has both dried flower form and powder. You can use either to make a lovely blue drink.
Step by Step Instructions
Steep the butterfly pea flower tea: Add 150ml hot water to the butterfly pea flower, steep for 5 minutes, then strain the tea liquid.
Mix coconut milk with the butterfly pea flower tea for this lovely blue milk tea. In a serving cup, add ice cubes and pour in blue milk.
If you are using butterfly pea powder, just mix it with double the amount of milk, and it will turn blue immediately.
Add ice cubes and pour in coffee liquid.
You can either use the cream top or not. But for me, it is the ideal part of this drink because it creates a lovely white layer and great flavors.
To make this cream top, add a small pinch of salt to whipping cream and whisk for around 8 seconds.
Blue Butterfly Pea Flower with Latte and Cream
Ingredients
- 1 tbsp butterfly pea flower tea or you can use powder
- 1 cup hot boiling water
- 1 tbsp. condensed milk
- 1 cup milk I use coconut milk this time
- ice cubes
- 1/4 cup coffee liquid
- cookies for decoration
Top cream
- 3 tbsp. whipping cream
- 1/8 sea salt
Instructions
- Similarly, add 1 cup of hot water to the butterfly pea flower tea, steep for 5 minutes, then strain the liquid.
- Mix coconut milk, sweetened condensed milk with the butterfly pea flower tea to get this lovely blue milk tea.
- In serving cup, add ice cubes, pour in blue milk. And then followed by latte.
- Whipping the cream with a very small pinch of salt in a small cup for around 10 seconds.
- Top the cream and decorate with crushed cookies.
