Sago is a small tapioca pearl. Traditionally, it is made from starch from the palm tree. However, the version we can buy from the store now is tapioca pearls.

Unlike traditional brown sugar or black sugar boba pearls, sago pearls are white and have a faint pink yet transparent look. I love this feature because it can make some dreaming look to your creation.

This strawberry sago has only four ingredients. It has a creamy, sweet taste and a dreamy pink color.

Strawberry Sago-13

Ingredients

  • 2 cups Strawberry cubes divided
  • 2-4 tbsp. cooked sago
  • ice cubes as desired
  • 1 cup coconut milk
  • 1/2 cup yogurt
  • 1 tsp. red dragon fruit juice (optional, only to darken the color)
  • 1 tbsp. syrup optionally

Ingredient Note

If you have a larger serving cup and want a more dramatic transparent look, I recommend using around 4 tablespoons of cooked sago.

To cook your sago, bring a large pot of water to a boil. Use about 10 cups of water for every cup of sago pearls to ensure they have enough space to cook evenly. Cook for 15 minutes and then rest for around 15 minutes. Then, rinse under running water and add sugar to mix.

Instructions

  • Blend half of the Strawberry and red dragon fruit juice with coconut milk. If you prefer a sweeter version, add some syrup in this step.

  • Add strawberry and cooked sago pearls to a serving cup. You can add ice cubes if you want a chilled version at this step.

  • To make a lovely layered watermelon sago, we pour coconut milk over the sago layer and then top with the blended strawberry texture.

Instructions

  • Blend half of the strawberry with 1/2 cup of coconut milk. If you prefer a sweeter version, add some syrup in this step.
  • In serving cup, add strawberry cubes and cooked sago, then followed with ice cubes if you prefer a chilled version.
  • In order to make a lovely layered strawberry sago, we pour some yogurt to cover the sago layer, then top with strawbeery smoothie.
