If you are a boba lover, you may have heard of another smaller tapioca pearl called sago. Watermelon sago is a perfect summer dessert because it combines the best summer flavors—watermelon and chewy sago.

Compared with regular boba, usually black or brown, sago is much smaller and transparent after it is cooked. We are bringing up the collection of sago desserts this summer because it can create some extremely beautiful breakages based on its white and transparent appearance.

It is a trendy dessert ingredient in Asian countries. Among all the different flavors, mango sago is the top choice. Most dessert stores sell this as the top star Choice.

If you love layered breavage, add coconut milk or yogurt to create a white layer with the cooked sago. We have tested with several batches and found yogurt is much better than coconut milk for layered sago drinks.

However, since watermelon is a fruit with pure sweetness, I decided to use coconut milk. However, my layered look isn’t very good. It merges very quickly after pouring the watermelon milkshake.

Step by Step Instructions

Cook the sago pearls: No matter how you plan to assemble your sago, the first thing to do is cook the sago pearls.

  • Boil the water: Bring a large pot of water to a boil. Use about 10 cups of water for every cup of sago pearls to ensure they have enough space to cook evenly. Those pearls will absorb the water and expand greatly.
  • Cook the Sago Pearls: Add the sago pearls in and stir to prevent sticking. Keep the water to boiling so the pearls will not stick together in the cooking process.
  • Cover and let it set. After 15 minutes, the sago pearls will become translucent with a small white dot in the center, indicating they are almost done. Now cover the lid and set aside for around 15 minutes until they are thoroughly cooked.
  • Rinse and add flavor: Since the water for boiling the sago pearls will become sticky due to the starch, rinse under running water to remove the stickiness on the surface and then add some white sugar or syrup to coat them.

Blend half of the watermelon with 1/2 cup of coconut milk. We don’t use syrup in this version because watermelon has a sweet enough taste.

Add cooked sago and watermelon cubes in a serving cup, then follow with ice cubes.

To make a lovely layered watermelon sago, we pour coconut milk over the sago layer and then top with the blended watermelon and coconut mixture.

Ingredients
 

  • 1 cup watermelon cubes divided
  • 2 tbsp. cooked sago
  • ice cubes as desired
  • 1 cup coconut milk divided
  • 1 tbsp. sweetened condensed milk if you prefer a vegan version, use simple syrup as a substitution.

Instructions

  • Blend half of the watermelon with 1/2 cup of coconut milk. If you prefer a sweeter version, add some syrup in this step.
  • In serving cup, add cooked sago and watermelon cubes, then followed with ice cubes.
  • In order to make a lovely layered watermelon sago, we pour some coconut milk to cover the sago layer, then top with the blend watermelon and coconut mixture.
  • Top with some watermelon cubes and your summer dessert is ready!
  • You can match with other fruits like strawberry.
